Coleslaw with a Kick

Makes 12 servings 

 

For more of a traditional coleslaw omit the jalapenos. For a variation replace half of the carrots with thinly sliced jicama or fennel. To save time use raleady shredded cabbage and carrots.

 

Ingredients:

2½ cups mayonnaise

2 tablespoons lemon juice

1 tablespoon sugar

1 pound green cabbage, shredded

1 pound red cabbage, shredded

½ pound carrots, shredded

3 jalapeno peppers, finely diced

Salt and pepper to taste

Directions:

1.  In a large mixing bowl combine mayonnaise, lemon juice, and sugar. Add green cabbage, red cabbage, carrots, and jalapenos. Toss well to coat.Taste and season with salt and pepper. Refrigerate for 1 hour before serving.
